I wanted something bright and 'Californian' for this LO.
This was one of my first American food experiences when I arrived in the US. I fell in love with it and since then have made it so many times I've lost count - each time with loads of compliments. It's great as a dip on chips (tostillos?!) or as a side with chicken or pork and one lady told me that she had it for a desert as well.
It's easy because you just chuck it all in a blender (or hand dice if you're like me!!) and then leave to sit for an hour or so then eat. It keeps wonderfully well in the fridge though so I usually double the quantity when I make it.
