Recipe Swap_Augt2010 Mexican Chicken

 

I got this recipe from a recipe book, which I don't remember the name of, but it was a family favourite and I still enjoy making it. I enjoy eating it too. lol :-)

Journaling:

 

Mexican Chicken

1/4 C. Vegetable Oil

1 Chicken - 2 1/2 to 3 pounds

1 Large onion chopped fine

2 Cloves of garlic - peeled and minced

1 Tablespoon of Chili Powder

1/2 C. Uncooked Rice

1 1/2 C.s Chicken Broth

1/2 Teaspoon Salt

1/4 Teaspoon Pepper

1 Can of Tomatoes and Juice (diced)

1 Cup of Frozen Corn

 

1. Put oil in a pan, on moderately high heat and brown the chicken on both sides

- about ten minutes.

2. Add onion, garlic and chili powder. Stir and reduce heat to moderate. Cook for

five minutes.

3. Add rice, chicken broth, salt and pepper, then cover and cook for 25 minutes.

4. Add tomatoes and corn, then stir, cover and cook for five minutes. Tilt skilet

and remove fat off the top of the juice, then serve.

 

Serves 6 - or 4 very hungry people
