A steamboat session is actually kind of like a hot pot dinner. You can see how my family does it in the second picture on the left column - you have this pot of broth boiling in the middle of the table, with many many plates of different types of uncooked vegetables and meats and even noodles placed all round. Then people simply pick what they want from the spread available, throw it inside the pot of broth (called the steamboat) to cook, then dish it out when it's done and enjoy with a sauce or dip or just by itself. It's great fun, and gets yummier as the meal goes on coz the flavours of all the different foods slowly accumulate in the broth. My family loves to end the meal with special hotpot noodles cooked and served in the last of the broth, where all the essence lies, complete with flowery egg! Just thinking about it makes me go slurp! =)
