Carrot & Parsnip Mash

We first had this recipe at an Irish pub in Denver (many immigrants came here during the Gold Rush years.)

It was so beautiful, and delicious, so I tracked down recipes for it; this is an adaptation (with the olive oil and broth for a healthier version.) Thanks for stopping by!

    What a pretty color for a side dish. I haven't heard of this dish, but it will be fun to try it.

    This sounds yummy! Plus, another way to use parsnips. I've been looking at all the seed catalogs in the mail lately...I think parsnip seeds might go on the list for the veggie garden this year.
