Breakfast Egg Muffins

Oh yum, this looks really good and I like breakfast meals that can be put together ahead of time.    Your card is so pretty and I love the chicken and background but I'm sad - I think I missed that paper freebie!   

Yum. I like the idea of the added spinach. When is the sausage (or bacon added)? I think I would like to make this for company, but a few family members are vegetarians and I was wondering if the sausage is just sprinkled on top?

You are correct - I forgot to add the sausage. I mix it in with the egg, cheese, etc, but it could easily be held out and put on top (maybe mushed down just a little.)
