June 2021 SG Recipe Swap: Vegetables - Impossibly Easy Vegetable Pie

This sounds like a delicious variation on a pot pie! With a vegetarian joining the family, I will be sure to try it. That photo just makes me want to take a bite.

@Celestine Me too, vegetarian!  I forgot to say in my notes that I don't know if you've ever made an Impossible Pie, but you pour the batter over whatever you are using and it sorta makes its own thin-type crust at the bottom as it's baking.   I really like them and make Zucchini ones all the time.

Impossible pies are really possible!    This sounds delicious and your card is lovely.  I really like that you included the photo and its round shape.  Also, the added broccoli cluster is perfect.
