Recipe: Baked Eggs and Cheese YUMMY!!
Ingredients:
12 eggs
1 lb mozzarella, sliced and soaked in milk for 1 hour
2 garlic cloves, chopped
3 tbsp basil, chopped
2 large tomatoes, 12 slices each
Salt and pepper
1/2 c parmesan cheese
Preheat oven to 325°
Directions:
1. Butter 6 small baking dishes.
2. Break 2 eggs into each dish.
3. Drain mozzarella, pat dry and put layer of cheese over eggs.
4. Sprinkle with garlic and basil.
5. Cover with tomato slice, salt and pepper, and parmesan.
6. Bake 20 minutes or until whites are set.
7. Serve with hot toast on the side.
Yield: 6 servings
