May Recipe Swap: Stir Fry Veggies & Rice Salad

After being diagnosed with diabetes a month ago my cooking has taken off in a new direction and all for the better. I've had to read labels all along for my DH (celiac) and now I'm reading for additional info. So you see the addition of Nutrition info included with my recipe. This is a salad I made up one day based on what was in the fridge and in the veggie bowl. It has turned out to be one of my most favorite meal staples. It is very carb friendly and gluten free ... and ... it tastes GREAT! :dancingelephant:

 

I covered the bases on several challenges with this LO: the recipe swap, the Saturday Color Challenge for 5/9 - monochromatic and the SG Monthly Club LOs. It's fun to push myself to work within the boundaries of a challenge. It helps me to help me push my personal boundaries in new and different ways from how I would normally work.

Awesome Kay! Both my parents are type 2 and if I don't lose some weight I'm headed there too!

Genetics are a bummer sometimes, but I'm walking my hill (VERY STEEP) at a mile down and a mile back up at least once every day and we bought a treadmill for those pouring down rain days we've had so much of lately. I've lost 12 pounds so far and feel great. BS readings are normal so ... just keep on keepin' on trying to stay healthy.

 

Try the rice salad - it is so VERY good for the breakfast. I realized a couple of days ago that I was eating it every meal. I cook it up and then portion it out in 1/2c servings. Gotta love those glad ware containers. This salad also freezes well.

Good Morning Kay, I love the monochromatic look to your card as well as the fact you tipped it on it's side. How clever! Your recipe sounds delicious. I'm still catching up from being gone, so hopefully can find some time soon to leave you a note. WTG on your weight loss. That is not easy. I'm proud of you.

Kay LOVE THE SHAPE of this recipe !!!! Looks like (only much prettier than) some of my own "handwrittten" long note sheet best loved (did I lose ya yet??? :rofl: ) recipes !!!!! Amazing (that I finally got to the end of that :rofl:) job there LADY !!!!!
