May Recipe Swap: Stir Fry Veggies & Rice Salad
After being diagnosed with diabetes a month ago my cooking has taken off in a new direction and all for the better. I've had to read labels all along for my DH (celiac) and now I'm reading for additional info. So you see the addition of Nutrition info included with my recipe. This is a salad I made up one day based on what was in the fridge and in the veggie bowl. It has turned out to be one of my most favorite meal staples. It is very carb friendly and gluten free ... and ... it tastes GREAT!
I covered the bases on several challenges with this LO: the recipe swap, the Saturday Color Challenge for 5/9 - monochromatic and the SG Monthly Club LOs. It's fun to push myself to work within the boundaries of a challenge. It helps me to help me push my personal boundaries in new and different ways from how I would normally work.
