Aka Boerenkool Stamppot A Dutch weekday meal we enjoy often. We had kale before most people knew what it was, lol. A lot of Dutch cooks have their own methods of making stamppot, and we have our own variations. My hubby (not dutch!) makes a great carrot/onion stamppot. Journaling: Christmas 2022. There was a crazy snow storm. We weren’t sure we were going to be able to go to Paul and Yo’s for Christmas dinner. Chris was making a prime rib. I don’t remember what I brought, probably stuffing, cranberry sauce and veggies. We waited until about 3:00 PM for the go ahead. Chris and Christina got stuck in the ditch, and had to ask Paul to rescue them, lol. He got them out with the truck and some tow straps So next time I won’t be in such a hurry for a white Christmas! Ken found some colour-blind correcting glasses he wanted to give to Judah. Ken tried them, but they were also mirrored on the inside and very distracting. Judah is a cute model none the less! All the colour-blind guys didn’t really like the correction. They see the world much differently, and are quite used to it that way. I used: December ScrapSimple Club

Journaling: We didn’t do any geocaching in Florida, so this 2 night stopover in Tennessee was perfect for it. It was in the low 80’s instead of the mid 90’s, which was way too hot for me to be traipsing around looking for caches in the woods. We stayed in the Smokey Mountain Lodge by Wyndham, using our points. It was nice to see mountains in the distance instead of driving on them. We found a few micros, which I don’t really like to find. These weren’t too difficult. Then we looked for a travel bug hotel, and as soon as I saw the birdhouse behind the Info Centre, I knew that was it. (I found it!) A lot of the travel bugs were playing card size. The request here was to only trade one for one. We didn’t have any to trade, so just signed the log book. This was a nice stopover, instead of just staying in a hotel. We went to the Texas Roadhouse, using the last of the gift card Yo got Ken for his birthday! Journaling: Now that things have settled down and people are getting back to normal, I hope to encourage families to cook together and eat a good meal with each other. Of course there is time in our lives to go out, and I also enjoy some take-out once in a while. A new dessert place in town was thoroughly enjoyed! Our wedding anniversary is a time I love to go out for dinner with my hubby, just the two of us! Journaling: March 2020 changed what I posted on Facebook. In the beginning, when we thought we would only be in isolation for a few weeks, I wanted to help people who normally don’t cook at home very often by presenting easy and yummy recipes. There were so many conflicting and angry ideas going around that as it got longer and longer, I wanted to have a positive outlook. Journaling: The calm, happiness and joy I feel when everyday is a “me” day is overwhelming. No longer working outside the house, driving, or raising babies has unleashed a freedom in me to be as creative as I was born to be! All the art supplies I collected over the years are finally being used to create mixed media projects, cards, tags, and many other crafts. I simply jam to a great playlist or listen to a fantastic audiobook and let the show begin!
