Holidays are near, i love making cookies!! My most favorite.. are my pumpkin chocolate chips cookies. When i make these, i make the recipe 3x because they go VERY fast.

Pumpkin chocolate chip

1 c sugar
1 cup canned pumpkin
1/2 c shortening (vegtable)
2 c flour
1 tsp Baking powder
1 tsp baking soda
1 tsp cinnamon (sometimes i like to use pie spice)
1/4 tsp salt
1/2 cup chocolate chips (recipe orignally calls for rasiens.. but chocolate is so much better)


mix sugar, pumpkin, and shortening well. Add rest of ingrediants.
Drop on ungreased sheet. Bake 8-10 min @ 375 degrees.


I know i live on a mountain, i fix the recipe when i cook as a habit, so this recipe should cook fine for all you lower elevation ppl. :)

Oh Angela, those sound wonderful. I had a pumpkin chocolate chip cookie from a nearby bakery at an outdoor arts fair a couple of weeks ago and loved it. I wish I could do some baking but that's not feasible right now. I definitely will have to save this recipe.

I have a wonderful cookie recipe that I will share later today when I get out to the kitchen to dig it out. It won Best in Show at a special chocolate contest at our county fair years ago. It's not original, I think I got it off the Choc-bake (premelted baking chocolate) package.

We should do this as a scrapped recipe swap. Is that possible? Would it be against any rules? I'm new here so I don't know. On another paper board I was on, we each scrapped a recipe and made one for each person in the swap. We could always upload them to the gallery and then other swappers could download and print out the recipe for their own recipe collection.

Please let me know if I'm out of line here!

I will post my favorite "cookie" recipe when I dig it out.

Christina, this is something that we did last year and it was very popular. I think we should do it again! Brandie was in charge last year, but I'm sure the Welcoming Committee could probably do it. It was a blast and I am still using the recipes and having tons of fun. Loved it!

I believe that scrappylibrarian is doing this! This upcoming thursday she will put up a challenge and then on friday have a chat. those who want to swap, i think she'll give instructions either thursday or friday.

I had this half way typed out and then it disappeared on me. I'm still trying to get used to my dh's laptop. teehee

Chocolate Snappers

1 cup sugar
2 teaspoons baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
3/4 cup vegetable shortening
1 cup sugar
1 egg
1/4 cup corn syrup
2 envelopes Nestle Choco-Bake (regular baking chocolate melted works fine too)

Preheat oven to 350 degrees F. In small bowl combine flour, baking soda, cinnamon, and salt. Set aside. In large bowl, combine shortening, 1 cup sugar and egg, beat until creamy. Mix in corn syrup and Nestle choc-bake. Blend in flour mixture. Shape into balls, using 1 level measuring tablespoonful dough for each.
Roll in granulated sugar. Place on ungreased cookie sheets. Bake at 350 degrees F 8-10 minutes.

Variation: Choco-mint Snappers - Follow above recipe. Mix in 1/4 teaspoon peppermint extract along with corn syrup and chocolate.

I have loads of fantastic cookie recipes. My mother in law used to publish cookbooks. ;) She would sweep the blue ribbons at the county fair. The other contestants didn't appreciate it much. Tried to get her disqualified because she wrote the cookbooks. (Didn't work, she wasn't a professional cook.) Another item on the to-do list: re-publish her cookbooks.
