I'm not feeling too well...been a crazy day...and to top it off, my poor dh came home from work sick and is in bed, which is not like him at all! <f> But, I want to tell you about the Thin Mint Cookie recipe...when you make them, really taste after each drop of the peppermint candy oil (use an eyedropper to measure each drop...the oil is strong!!!). After all the cookies are set (they will be glossy & shiny), melt some additional summer coating and get some of Wilton's sugar Cake Decorations that come on a piece of cardboard. Paint the back of one decoration and immediately gently press into a cookie. Repeat with next decoration & cookie till all are done. These cookies taste like Girl Scout Thin Mints and when you decorate them like I suggested, they look absolutely gorgeous on cookie platters. My favorite is the psychedelic flowers...the big ones on the cardboard!!! I make these for all the family parties!!!

I have to wait another four days to be able to download mine because we have used up all our broadband usage for this month!!!!!
This is a exercise in paitence!!!! And I'm like Shari and don't do paitence very well!!!! It takes ages just for this to load so I guess I will just have to enjoy you all enjoying then I can enjoy again in 4 days!!!!
I have no idea if I have missed the chat or not. I got the wrong day first time round. I thought the chat was on the 12th but that was when we neeeded the recipe in by and I see that the chat is today but I don' know what time 9pm is on our time!! So I hope that you all have a great chat!!!

As a little bonus, maybe you can write this on the back on my card (it's the last one) for fudge.
If you would like to try white chocolate, pistachio and cranberry version, I believe you could do this:
Substitute the chocolate and butterscotch chips with white chocolate chips.
Substitute 1 to 1 1/2 cups of shelled natural pistachio nuts for pecans.
Add 1/2 cup dried sweetened cranberries.
I made this last year (and I think the proportions are about right, but I'll make more just to be sure) and it was a HUGE hit. I was surprised at how much I liked it.

I ALWAYS substitute dried sweetened cranberries for the dried cherries.
IF you don't want to put in the white chocolate, double up your dried fruit.

I also made the Santa Grahams for the boy's daycare Christmas party. They were a hit! Very labor intensive though. Next time I will let the kids make there own! I think we are going to use the leftover icing to make more for Santa, and for the my niece and nephews to make on Christmas day. I couldn't find any gumdrops so I used Yo-Go's for the noses.
I made the build it better oatmeal cookies too. I used dried cranberries and pecans. Those are really good too!
Everything is hidden in the freezer from little fingers (and DH!)
I made my own Eskimo cookies too, Tyler helped roll them in the icing sugar. Lots of fun!
Thanks for sharing your recipes! I can't wait to get to the rest of the recipes!
