And buying the bags of dried beans isn't as difficult as I thought it would be - I thought it would take a long time with the soaking and the removal of the culls, etc., but it isn't at all and there is NO sodium or anything bad in the dried beans - so I can make soup or stew or just beans as a veggie. I will say we have eaten more salad than I would normally eat and will hold off on salads for a while - but it gets easier every day. Thinking of the menus is the hard part.
Tonight I am making Turkey Burgers from scratch from a recipe I found - leaving out the salt and some other things but the recipe sounds good - and then going to try black bean burgers and since we eat them without the bread and with a couple veggies, it's a good and healthy meal.
I'd love any ideas from anyone else who might have some heart healthy recipes.

tonight was left overs from our lunch at Applebees.
Last night I made Florentine pasta
Tues was Stuffed Orzo peppers with white sauce
Mon I made an on the fly Mexican, chicken, northern beans, salsa, and rice mush stuff- it turned out yummy thank goodness

Since I'm sick, dh made dinner - I did eat it, but it was not my idea of a dinner - he made mac and cheese, lentil soup (that I had made frozen and kidney beans! He's such a good guy but doesn't know what goes with what - it really wasn't bad - and he tried - he is so not a cook - but I love him for making dinner -

Saturday night we at Pizza from Papa Murphys
Friday night we had Fried Rice from the local Thai Restaurant
Thursday was my son's bday party we had mac n cheese with winnies for the kids and subs for the adults
Wed we ate leftover pulled pork on toasted bread
Tues we had lamb chops, I made them for the very first time.

Borek is one of our favorite things to have and even though it's really a meze in Turkey (an appetizer) we like it so much we often have it as a meal. It's made with filo dough and goat cheese - the feta cheese doesn't work so well because it just doesn't taste the same as the pure goat cheese we got so used to in Turkey - it's really awesome and delicious!

Tonight we ate Baked chicken rolls. It was a new recipe. Home made rolls with cream of chicken mixture baked inside the roll, topped with roasted pecans.

I always have Chelsea buns in the deep freeze and Ultra Mel custard in the cupboard. An instant dessert if you have unexpected guests. The kids love it. You can add anything to the dessert. I like adding coconut. Add raisins or sultanas. Grate chocolate over the top before baking. To make it a bit richer, add a bit of cream to the custard. (I don't).
