We had white chicken chili a couple days ago. I made a huge batch so we ate half and froze the other half for another meal. Love that stuff!

Last night we had Walmart deli take-n-bake pizza.

Tonight we are having chipotle lime chicken thighs (baked in oven), cheesy polenta and green beans.

Amanda, Chili is one of Rich's favs so I am working on a heart healthy recipe to make it for him - he likes it with tomatoes so that means i need to use fresh tomatoes and will use lean ground round and will use the dried kidney beans - don't think it will be very difficult to change it to heart healthy - just can't use the canned tomatoes as I usually do but with the chili powder and spices I think it will taste pretty close to the regular chili I make - haven't bought a heart healthy cookbook yet - still looking but am just not using canned beans or tomatoes and lots of spices - so far everything is pretty good - surprised me cause i thought that without more than a wee pinch of salt that things would not be tasty but guess we are getting used to it, If the chili turns out well I will share the recipe. Funny how much better we feel now that we have cut so much salt and the bad fats out of our diet - we eat so much less portion wise - and now we go to the meat market and buy one nice size tenderloin steak and split it and it is plenty! And cost very little since we are splitting it - tenderloin steaks have no fat on the so they are the best steak to treat ourselves to and when we buy just one (about 1- 1.5 inch thick) split it and with a couple of sides, it makes for a good meal. We can have that steak once a week so it is truly a treat for us.



And buying the bags of dried beans isn't as difficult as I thought it would be - I thought it would take a long time with the soaking and the removal of the culls, etc., but it isn't at all and there is NO sodium or anything bad in the dried beans - so I can make soup or stew or just beans as a veggie. I will say we have eaten more salad than I would normally eat and will hold off on salads for a while - but it gets easier every day. Thinking of the menus is the hard part.

Tonight I am making Turkey Burgers from scratch from a recipe I found - leaving out the salt and some other things but the recipe sounds good - and then going to try black bean burgers and since we eat them without the bread and with a couple veggies, it's a good and healthy meal.

I'd love any ideas from anyone else who might have some heart healthy recipes.

I made the Turkey Burgers using Ground Turkey Breast which I had ground for me and used cumin, dash of chili powder, french baquette crumbs and I have to tell you - they were really good - Since I did not serve them on bread or buns, i had to have cut up red onions and tomato slices with them, but the combination was quite awesome and I was surprised! Guess I will be adding that to our menu more often now that I know I can make a good Turkey Burger as long as we leave out the bread.

Wow I've been gone for a long time.

tonight was left overs from our lunch at Applebees.
Last night I made Florentine pasta
Tues was Stuffed Orzo peppers with white sauce
Mon I made an on the fly Mexican, chicken, northern beans, salsa, and rice mush stuff- it turned out yummy thank goodness

You sure have been gone a long timr - I've missed your menus - they all sound so yummy

Since I'm sick, dh made dinner - I did eat it, but it was not my idea of a dinner - he made mac and cheese, lentil soup (that I had made frozen and kidney beans! He's such a good guy but doesn't know what goes with what - it really wasn't bad - and he tried - he is so not a cook - but I love him for making dinner -

Last night was the Easter Ham (of course),
Saturday night we at Pizza from Papa Murphys
Friday night we had Fried Rice from the local Thai Restaurant
Thursday was my son's bday party we had mac n cheese with winnies for the kids and subs for the adults
Wed we ate leftover pulled pork on toasted bread
Tues we had lamb chops, I made them for the very first time.

Tonight we are having a simple supper cause I am so tired from the traveling - we're having Turkish Borek and a simple salad.

Borek is one of our favorite things to have and even though it's really a meze in Turkey (an appetizer) we like it so much we often have it as a meal. It's made with filo dough and goat cheese - the feta cheese doesn't work so well because it just doesn't taste the same as the pure goat cheese we got so used to in Turkey - it's really awesome and delicious!

Have my sauce on cooking for spaghetti and meatballs tonight - it's cold here today - we need comfort food! Meatballs are simmering and almost done and then I'll throw it all in the sauce and just kick back the rest of the afternoon - I love days like this!

Tonight, Rich is working so it's the night I spoil myself with some cold boiled shrimp - I keep the giant, yummy shrimp in the freezer for these nights - Rich does not like shrimp, so I'm having just cold boiled shrimp with a little cocktail sauce and a spinach salad for dinner.

Tonight we ate Baked chicken rolls. It was a new recipe. Home made rolls with cream of chicken mixture baked inside the roll, topped with roasted pecans.

Anybody want a quick and easy bread pudding? Two ingredients. Take a packet of 6 Chelsea buns and either break into small pieces or slice. Place in ovenproof glass dish, add a pint of ready made vanilla custard. I use Ultra Mel. Bake in 400F (180C) oven till custard is bubbly.
I always have Chelsea buns in the deep freeze and Ultra Mel custard in the cupboard. An instant dessert if you have unexpected guests. The kids love it. You can add anything to the dessert. I like adding coconut. Add raisins or sultanas. Grate chocolate over the top before baking. To make it a bit richer, add a bit of cream to the custard. (I don't).
