That sounds delicious - must be why you were looking for the salsa in your cupboard! I love to make things like that too - maybe tonight that would be a good idea since it is already tomorrow and I am sitting here thinking of dinner at 2:30 am - oh, I think I really need to sleep - it's way too early to plan dinner but you gave me a good idea.

Great thread! Sunday was grilled London Broil and baked potatoes, fruit salad and peach cobbler. Last night was Hamburger Helper Beef Stroganoff, salad and cantaloupe. Tonight if dh is home will probably be chicken or pasta, but if dh is gone, the kids and I will just have hot dogs and mac and cheese.

I find it so hard to try and decide what to eat in the summer, it's too hot to cook!

Here it is almost 4:30 pm here and I have NO idea what we are having for supper - maybe breakfast tonight? It has been so hot and now raining and we are both lazy now after having been out all day with doc appts. that I don't think we really care what we have. It's just that kind of day! Does anyone else have days like this?

Melanie, we decided to have BLT's last night - something I don't often fix just because of the bacon and Rich's cholesterol - but last night they were so good - we had fresh tomatoes from neighbor's garden for them and SO GOOD that dh had three of them - that's not so good for him - but the bread was small so I guess one night won't hurt him - I try very hard NOT to fix things that push his cholesterol up, but sometimes he just really wants the things that are so bad for him - last night was one of those nights.

I made spaghetti and homemade meatballs. What was really cool was my salad though. I never really like my own salads, but I have called Panera's Fuji Apple Chicken Salad my favorite for a year or two. Tonight I imitated it by mixing apple juice into some jarred dressing and adding pecans and cheese to my lettuce and tomato. Finally, since we weren't having chicken (and I didn't want spaghetti), I put three meatballs on the salad! It wasn't really a Fuji Apple Chicken salad, but you might say it was like scraplifting. I was inspired to make my own version of the salad. :D

Yippee! Tonight is dinner out - time to cheat a little - it's #2 son's birthday and our daughter is flying in from St. Louis and we are all going out as soon as we pick her up from the airport to this neat little place called Flat Rock Grille - so tonight I will splurge and eat what I want! Bad, bad Sara.

I had the most incredible seafood pasta with scallops and shrimp and white fish in big chunks in it in a heavenly sauce, my DD had the same thing, Rich had the pork loin which melted in one's mouth, DS had some kind of pasta with chicken and his significant other had a salad that looked like a work of art - made me wish I had ordered the salad. It was a wonderful dinner out and they brought Brian a huge Chocolate Brownie with Chocolate Sauce and a candle on it for his birthday - kind of a fancy smancy place - he chose it - we always let them choose where they want to go on their birthdays - it was good but not so good that Rich and I would go back there again.

So I am stuffed and angry with myself for eating things I shouldn't have but all that food just made me tired - PLUS we had three little rug rats and one 3 month old with us and they kept the whole Grille entertained with their antics - very well behaved, but they are 7, 5, 3 and 3 months, so you can just imagine the entertainment they provided the staff!

Tonight is Cracker Barrel - the fav place for the kids to eat - so - guess another night of eating things I should so not eat - the weekend is going too fast and I am eating way too much but am really enjoying having my family together for awhile.

Well, last night the kids got to choose where we ate dinner and they opted out of Cracker Barrel for Golden Corral - so........I thought that surely eating from the buffet, the kids would eat very little but much to my surprise they ate much more than the grownups did - continually went back to fill their plates and they are so young - 7, 5, 3, and well, the 3 month old didn't eat from the buffet, but the others ate broccoli, carrots, fruit, filled their salad bowls over and over again with green peppers, onions, all the good stuff - no junk. I sat in amazement as I watched them continue to eat long after I was finished with my little meal.

THEN they hit the dessert bar - oh, my! That meant several trips too - they had ice cream loaded with everything available on the dessert bar and just ate and ate and ate. These children are slim and I guess their metabolism must be awesome - they amazed me!

And, they will eat a whole green pepper as if it were an apple!

My kids love a good buffet, also, Sara, and I am always surprised at the amount of fruit and veggies they will eat if they are all cut up in front of them. It is our last weekend before school starts, so we have been running around like crazy, and have had lots of meals out. Yesterday was Chick fil A, my favorite. Today, though we are grilling London Broil. Sunday always seems to be grill day around here.

I think tonight we will pass on a big supper - maybe just some healthy snacks - we had a huge lunch with my Dad, DD, DS and the two of us - and I am so stuffed - I had the Eggplant Parmesan with no cheese (healthier) and it was delicious. My Dad had Catfish because it's his favorite thing to eat when we take him out and Rich had Veal Parmesan and DD had chicken something or other. We had a great afternoon

I'm allergic to Eggplant otherwise it all sounds so yummy

For dinner tonight I made stuffed orzo pepper. Very similar to stuffed peppers but you used orzo pasta instead of rice.
