DH is out of town tonight with work-HE'S having Ruth's Chris Steak House! The kiddos played outside until late, so they had mac and cheese with fruit and carrots. I wasn't super hungry for some reason, so I just had a salad and a bit of mac and cheese.

I think there is some confusion here - we post and wait for the next person to post before we can post again - don't know if it is in the TOU's, but we can't post ourselves one right after another - am I wrong here?

To the best of my knowledge, this is simply a thread about sharing what we are having for dinner - and commenting on what others share. No rules, other than our TOU. Fun for all, great place to get inspiration for our meal planning. :)

Sounds interesting, I was put on a special diet in college by a nutritionist. When it comes down to it I ate a lot of vegetarian stuff while on it because my meats were so restricted. Anyway, there were these vegetarian sloppy joes in a pre-mix I'd eat. but they would make me sick afterwards (on both ends) I finally decided they just weren't worth it and gave up. These sound good. I'll have to check them out. I wonder what the points are like on them.

Tonight for dinner we're having a chicken curried stew (its chicken curry but I make it more of a stew than a curry) served over rice. I can't wait to eat, it smells so yummy.

Taco night here! Strangely enough dh didn't want shells, just a taco salad, ds1 just had braces tightened so no shells for him, so we ende up having soft tacos rather than crunchy.

Brandie, I'm sorry I was not in this thread when I posted that - not sure how it got in here - it was in the games thread - ??????? That has happened a couple of times - I've posted and it's jumped me to another thread and I've had to delete it cause it didn't belong in that thread.

Oh, and we've had lots of really yummy hospital food for dinner lately. Ouch! Did I just say the word "yummy"..............LOL

Me, too! That sounds delicious - I wonder if I can make substitutions to make it heart healthy? Rich can have white pasta only once a month - the rest of the time it has to be whole wheat pasta and somehow I can't quite imagine this yummy dish with whole wheat bow ties, can you?

I'm open for any suggestions anyone has for help with our new lifestyle way of eating - no sodium for one thing - and lots of other rules but if anyone has any ideas maybe I can substitute what is on Rich's list and still make your recipe a yummy dish he will enjoy.

Last night fixed what I thought was going to be a nice dinner - I baked some skinless chicken breasts with some sweet red peppers, a few onions and sliced a couple of fresh tomatoes to throw in with them - (Rich can have nothing canned veggie wise since most of them contain sodium and they prefer we use fresh produce)

I thought it tasted pretty good - added a little bit of seasoning to it and the chicken was fall apart tender and the peppers, onions and tomatoes added great flavor - but Rich wasn't very happy with it - he ate it - but asked that we not have that again.
LOL

And this is just the beginning!

We were bad this weekend. Went out on Thursday for Korean food. Ate left overs on Friday, and then went out again on Saturday to the Greek restaurant.

Back on schedule. I'm making beef and broccoli tonight. I can't wait.

Last night we had a small tenderloin (he can have one no larger than a deck of cards once a week) and he only ate half of it but that's okay - and we had baked sweet potatoes and sliced tomatoes - it was a good supper and all things he can have except of course can't add any salt to anything - I am getting used to it quickly - Rich is kind of iffy about it but he's doing okay with it - he really enjoyed supper last night.

Not yet sure what's o the menu for tonight.

So I know I made Chinese tonight. But I bought some meat perfect at the grocery store today that is perfect for Bolgogi (Korean, there is a recipe card from this month's swap).
I have the meat marinading right now. I hope my husband doesn't mind.

After reading this thread I'm all of a sudden feeling very hungry. Tonight my two littlies (7 and 9 aren't very little anymore!!) and I are going out for dinner since it's a family tradition to go out on one's birthday evening. Since my DH and our eldest son aren't here, we are going to Red Lobster as I've always wanted to go there but since they don't like seafood we haven't ever been! So while they're away, the CAT will play?!?!? LOL!!
That Beef Tamale Bake sounds wonderful - I'll have to look up that recipe me thinks! LOVE tamales!!

Last night for dinner I fixed Acorn Squash and made a casserole with ground round and potatoes and onions, peppers and rice - it's one Rich really likes and he loves Acorn Squash - I made it thinking it might really be something he would want to eat but he only had a few bites - he just has no appetite but the doctors tell me this is so normal - and a friend who had the same surgery told me yesterday that the first three weeks after his surgery that he really ate almost nothing - he lost tons of weight and has kept it off to this day.

So, I will try something else again tonight - one day he will start to eat!
