I put a pork loin in the crock pot this morning. Added some dried onion, some garlic powder and squirted a bunch of Sweet Baby Ray's BBQ sauce on it. Pulled pork. My family was happy.
Tomorrow is marinaded sirloin, corn on the cob, roasted potatoes and a salad. Bob's favorites for his birthday. :)

Doc told Rich yesterday that he can eat anything he wants for the next two months so don't have to worry about the salt and stuff for another couple of months so tonight we are having skinny pork chops marinated and grilled, yellow squash with onions, and asparagus - all some of his favs - doc says he has to get his strength back before starting the diet so Rich is a happy camper! At least for another couple months! WA-Hoo!

Trying to gets lots of B vitamins into Rich - some of you may think UGH! but we had calves liver and onions last night for dinner - AND spinach - and mac and cheese! He has lost 6 more pounds so also he had a big chocolate milkshake yesterday with tons of ice cream and he doesn't know it, but I added a can of Ensure which, on it's own, is not very tasty but he drank the whole thing!

Trying to think of something yummy for dinner tonight - hoping someone will post something really enticing on here for ideas!

Soup - home made veggie soup! Thank goodness I have some frozen in my freezer - it always comes in handy when I don't feel like cooking and really need something healthy!

Every time I stumble onto this thread I get hungry. I'm with you Sara, eating healthy is hard to do.
It looks like I'm having chicken and biscuits tonight. Not exactly my idea of healthy but it sounds pretty good and I'm starving!

It is very hard - much harder than I thought - and every time I turn around I now find myself checking the sodium in drinks, food, cans, - it's everywhere! And I'm trying to do it gradually so we don't just completely cut it out but it's already in so many things that it's difficult to do. We went downtown today and went in a diner and the next thing I know Rich has a can of: he said, "Cranberry Juice - and it's good for me!" So I took the can and looked at it because he doesn't - it had 30mg of SODIUM in that one drink!!!!!! I really should have picked up on this a long time ago, and I did know about sodium intake, etc., but I didn't know how hard it would be!

Tonight is leftovers - little bit of this, little bit of that!

We had home made chili with beans over rice topped with onions and grated sharp cheddar cheese - tasted really good on a cold, cold night!

I know this isn't much of a regular dinner item for most people, but Rich and I love it and it IS what's for dinner at our house tonight. It's really filling for us - usually I think it's served as an appetizer but we don't eat huge quantities anyway. I'm making home made hummus with olive oil, lots of garlic, lemon juice and found some garbanzo beans with low salt in them! I bought organic garbanzo beans after comparing them with what I used to buy and the sodium difference is incredible. The ones canned by Bush have 450 g of sodium in the can and the organic ones have only 150 grams sodium - after I rinse them well, it should reduce the sodium by 40&.........AND they have no trans fat or sugar in them so we are good to go!

I am having celery sticks, raw carrot sticks, cucumbers and we will treat ourselves with a few pita chips to dip in the hummus. And you'd be surprised at how filling that is for us!

Anyone else like hummus? We started really eating it when we were stationed in Turkey for almost 3 years - it's like a staple over there!

Tues we had Pasta Primava
Wends we had Mexican flavored ground beef with onions, rice,beans, and green peppers, with a side of butternut squash

That sounds awfully good, Tas - I've decided that when it comes to chicken salad, potato salad and things like tuna salad, that they will have to be made with real mayo and not the low fat stuff - it is absolutely the worst thing I've tasted - and we'll just have to make concessions somewhere else when we have things like that. Made tuna salad with the low fat mayo and we each took a bite and into the garbage it went! Not worth it really!

Well, my hummus turned out well EXCEPT that I put way too much garlic in it - it had quite a bite to it, but it was still good - good thing Rich and I were both eating it because had only one of us been eating it we wouldn't have been able to stand each other! Whoa! that garlic was powerful!

We cooked most of the day for tonight & this coming week. DH smoked a pork roast, then we put it in the pressure cooker and then shredded it up for pulled pork sandwiches. They were so good!

In South Africa the low fat mayo is as nice as the real thing.

Gingered Sweet Potato Mash Serves four
Ingredients: • 2 pounds sweet potatoes, peeled and chopped
• 1/2 cup heavy cream
• 2 tablespoons butter
• 1 tablespoon grated ginger
• 1/4 cup honey
• Salt and pepper to taste
Method: Combine the sweet potatoes with enough cold water to cover in a large saucepan and cook until the potatoes are tender. Combine the cream and butter in a saucepan and bring to a simmer, keep warm.

Drain the sweet potatoes. Combine with the ginger and push through a food mill or ricer. Mix with the warm cream mixture and honey in a bowl. Season with salt and pepper.

Yummy, yummy, yummy! BUT I had to substitute the heavy cream with 1%milk and used Smart Balance Butter instead of real butter - we get out honey from a bee keeper so it isn't processed and it still tasted wonderful.

That would be my choice too, Belle, were it not for Rich's diet! But honestly, we didn't miss the butter or brown sugar - the cinnamon would definitely be a nice addition, I think.

Tonight we are having stuffed peppers - diet style - but just a couple of changes - still lean ground sirloin with some rice and home made tomato sauce and they already smell so good in the oven! Just added a little bit of salt and a couple of spices to spice it up a bit - Rich's fav.

I bought a bag of dried Great Northern Beans, soaked them as directed, and cooked them with some chopped celery, one chopped carrot, one very lean and very skinny pork chop with NO FAT on it, one chopped onion, added some water and cooked the beans down a little and then added some roasted garlic, some Mrs. Dash's spices and a wee pinch of salt - had planned to cook them all the way down but we decided to make it Bean Soup and it oh, so good. Not one single unhealthy ingredient in it and because the beans were dried beans there wa no sodium or sugar added as there would have been in a can. I'm really getting the hang of this - my Dad loved it and so did Rich so I'm proud of myself today for cooking a very healthy dinner for toda

This diet isn't half as bad as I thought it would be once we got used to it. I've found some really good recipes that are heart healthly.

Rich has been eating the beans all day - he says they are delicious, so I feel as if I've succeeded with one dish anyway, but yours just sound s so yummy!
