It looks like I'm having chicken and biscuits tonight. Not exactly my idea of healthy but it sounds pretty good and I'm starving!

It is very hard - much harder than I thought - and every time I turn around I now find myself checking the sodium in drinks, food, cans, - it's everywhere! And I'm trying to do it gradually so we don't just completely cut it out but it's already in so many things that it's difficult to do. We went downtown today and went in a diner and the next thing I know Rich has a can of: he said, "Cranberry Juice - and it's good for me!" So I took the can and looked at it because he doesn't - it had 30mg of SODIUM in that one drink!!!!!! I really should have picked up on this a long time ago, and I did know about sodium intake, etc., but I didn't know how hard it would be!
Tonight is leftovers - little bit of this, little bit of that!

I am having celery sticks, raw carrot sticks, cucumbers and we will treat ourselves with a few pita chips to dip in the hummus. And you'd be surprised at how filling that is for us!
Anyone else like hummus? We started really eating it when we were stationed in Turkey for almost 3 years - it's like a staple over there!

Wends we had Mexican flavored ground beef with onions, rice,beans, and green peppers, with a side of butternut squash

Well, my hummus turned out well EXCEPT that I put way too much garlic in it - it had quite a bite to it, but it was still good - good thing Rich and I were both eating it because had only one of us been eating it we wouldn't have been able to stand each other! Whoa! that garlic was powerful!

Ingredients: • 2 pounds sweet potatoes, peeled and chopped
• 1/2 cup heavy cream
• 2 tablespoons butter
• 1 tablespoon grated ginger
• 1/4 cup honey
• Salt and pepper to taste
Method: Combine the sweet potatoes with enough cold water to cover in a large saucepan and cook until the potatoes are tender. Combine the cream and butter in a saucepan and bring to a simmer, keep warm.
Drain the sweet potatoes. Combine with the ginger and push through a food mill or ricer. Mix with the warm cream mixture and honey in a bowl. Season with salt and pepper.
Yummy, yummy, yummy! BUT I had to substitute the heavy cream with 1%milk and used Smart Balance Butter instead of real butter - we get out honey from a bee keeper so it isn't processed and it still tasted wonderful.

That would be my choice too, Belle, were it not for Rich's diet! But honestly, we didn't miss the butter or brown sugar - the cinnamon would definitely be a nice addition, I think.

were gonna have meatloaf, mashed potatoes, and creamed spinach. oh and i plan on making a banana cake topped with bananas and homemade almond whipped cream on top

Rich has been eating the beans all day - he says they are delicious, so I feel as if I've succeeded with one dish anyway, but yours just sound s so yummy!
