I know how to do the basics of masks
but when I look here

I see the masks on these examples as having color, gradient or paper desing instead of the black that is left by a mask on your background
I have tried various things in PS not getting anywhere
I would love to know this technique

You should have gotten instructions with your mask - the technique I think they are using is a clipping mask - you can clip your paper to the mask for one thing. Otherwise, there are more advanced masking techniques you can use - someone will be by soon to explain, I'm sure.

clipping mask basics NO PROBLEM
it is tying in a photo with the mask, becoming a color or paper background
when I do the clipping mask with a photo, the design off of the image is only black

There are two masks for all your examples. The top one for the photo and the bottom one has a paper clipped to it. I look forward to seeing your finished product.
