Couldn't wait to read Ro's recipe for carrot pineapple cake in today's newsletter. My husband is "famous" for his carrot cake and I wanted to see how alike the recipes are. They are almost identical! He always puts cream cheese icing on though, and never varies the recipe.

It is very similar to the one my mom always made. She used it for one of my brother's wedding cakes. Yum!

Well I got a chance to make these today and they are very good. I used the crushed pineapple in its juice, and I think I will frost them before serving. I fixed a 1/2 batch in cupcakes and it made 18 average sized. I'll put them in the freezer and take them out for Easter and frost with a cream cheese frosting. I've been trying to bake some different cupcakes, freeze them and have them ready for Easter, so all I have to do is frost them and have a nice variety. The rest I will pull out when I need a dessert for a dinner party or for a church function. I already have some pound cake cupcakes in the freezer. I'm trying to decide what the 3rd type of cupcake will be. (Been watching too many episodes of Cupcake Wars. LOL) The carrot cake is great for Easter, Thank you Ro. Is this one of those cakes that gets sweeter overnight? I'm a sweet-a-holic. lol
