Looking For Menu Ideas

We are trying to watch DH's diet with regards to things that might cause gout flare-ups. The primary thing is meat, but we have also read that tuna, shrimp and other shellfish, and beans for example can also be triggers. :( I am going crazy trying to feed a very picky man. I am trying to replace all the obvious things like ground beef and kielbassa with turkey products. Heh's not a huge chicken fan but I'm finding ways he will eat it (chicken tacos, etc.). Trying to figure out some cool salad ideas and when I can, get by with all veggie meals (a little easier in the summer but I still get "is that all there is"?!) I pack his lunch every day also, and he is even picky there. He doesn't like the same thing 2 days in a row - or even 2 of the same sandwich!

I can survive on rice and beans for 3 days in a row so this is kind of frustrating. I like to cook but not when it's so much mental work and with so many restrictions! Can anybody else relate? How do you ladies with multiple kids in the mix do it all?! (Thank God my dog is not picky or at least he doesn't get a choice - LOL!)

I recently made Sloppy Joes using lentils & ground turkey instead of ground beef - it was delicious! Here's the link to that one: http://www.everylitt...sloppy-jos.html
(I didn't make mine vegan/organic - just used what I already had on hand - and added 1/2 pound ground turkey)
The leftovers of this tasted really good served on top of a baked sweet potato!


I would suggest loading up pasta dishes with vegetables and a little ground turkey (or turkey Italian sausage). You could make your own veggie pizzas. Maybe a vegetable stir-fry over rice. Adding mushrooms can help substitute the "meatiness" that you are taking out. The same website above has lots of other vegetarian recipes.

thanks for that site link, tiza. guess i need to be looking at more vegetarian menu sites. i am leery of loading him up with too much pasta but yeah, working veggies into them is a good idea. beans has always been one of my go-to items. figures it's on the list of triggers too. as are mushrooms and shrimp - go figure!

I try to limit my pasta intake. I've been eating a lot of quinoa. It's very filling and can be used served hot in place of pasta/rice, or even served cold in salads.

A lot of websites (including Food Network) have started featuring "Meatless Monday" recipes - you can try searching for those :)

I know the weather is hot and hot weather is not when one normally thinks of soup but when I'm at my best at cooking healthy, I make SOUP! There are so many ways to make a delicious and healthy soup and just add some bread and for us, that's a meal! My soups tend to be pretty chock full of veggies and often turn out to be more stew-like than soup-like but we are always happy to have a good bowl of soup. What I like about making soup is that one can adapt the recipe in so many ways to fit whatever one is trying to do - I do a lot of make ahead broth and freeze it to use for my soup later but I also use the boxed broths when time is of importance and they are always good.

I rarely follow a recipe completely for soup because I find as I'm cooking it I think of something in the fridge that I could add so my soups are never really quite the exact same recipe.

And I love quinoa too - I use it a lot and as Tiza said, it's filling and it's yummy!
