Mini Stuffed Peppers

Took a bag of small sweet peppers (red, yellow, orange) - they were about the size of jalapenos but NOT hot peppers. Sliced the side to create sort of a "canoe" opening and dug out the few seeds. I left the top/stem in place.
Stuffed each little sweet pepper with my regular meatloaf mixture. Placed in a shallow dish with about a cup of water in the bottom.
Cooked at 375 for about 20 minutes. Because they are so small, they cook really quickly!
Makes wonderful hors d'oervres for a party but we've had them twice in two weeks for dinner! My family loves them and they made a colorful (and pretty doggone easy) entree when we had guests over. Added green beans and a salad and bread and that's dinner!

One morning I was a little confused that there was a jalapeno pepper with a bite out of it on my kitchen counter. My Charlotte thought it was one of those cute baby peppers and took a bite!

The other day when I made the first mini stuffed peppers, I made a pepper-less meatloaf over to the side just for him. Then he told me that he didn't mind if the meatloaf cooked in the pepper but he just wouldn't eat the pepper. Well, that was news to me!
So now I've just been making the mini stuffed peppers and he eats the insides and dispenses with the cooked pepper.
My hubby eats almost no vegetables. Potatoes, corn, green beans - that's it - though I don't consider potatoes and corn as real vegetables, but starches. It's definitely made for challenging meal planning over the years!

Oh my! Bless her heart! That would be a startling realization. I can do sweet peppers, banana peppers, and a teeny-tiny bit of jalapenos if they are cooked in something. I'm a wimp on hot stuff!

What GREAT neighbors you have, Sara! How wonderful! I have saved some of the seeds from these little peppers and will give a try to growing them - but actually getting my vegetable plants to produce is difficult. I don't get enough direct sun long enough each day. Anyway, as long as I can find 'em at the grocery store, I guess I'll be okay! LOL
