Sounds interesting! I have lots of pumpkin puree that I need to use. I may try this. I wonder if you can use frozen cauliflower "rice"?

I love anything pumpkin and I like cauliflower too so I think I'd like this.   It sounds easy to make and I've loved to add cashews for protein.  Your card is so pretty and so is your cluster.

I don't see why you couldn't use the riced cauliflower. You would just have to adjust the cooking method, and your texture would be a little different without the cauliflower chunks. Let me know if you try it and what you think.

Definitely going to try this!  I really like the combination of cauliflower and pumpkin.  And, you incorporated them beautifully in the embellishments.
