Photo Scanning and Metadata Software

I have been looking at some old threads here on ScrapGirls regarding organizing photos and manually adding metadata tags to pre-digital scanned images. I see Lightroom tossed about, as well as ACDSee. It is unclear to me how they do things any more efficiently than adding batch tags under the "Properties" and "Details" tabs of the photo thumbnail on a PC using the regular File Explorer folder system. With my file folders set up by date and then subject, I can still do a specific search (i.e. "Smith John" and the metadata tags are pulled. What am I not understanding? There must be some advantage to these software apps. I am about to embark on some pretty epic scanning tasks, and would like to get started the right and most efficient way possible. Any hints or suggestions are VERY welcome.
