February 2021 Recipe Swap

It's Super Bowl week.  Do you celebrate?  Who are you rooting for?

This month's recipe theme is Healthy Alternatives such as gluten free, low carb, keto, etc.  

 

To participate in the Recipe Swap, please email your 4"x6" high resolution (300 dpi saved a high quality - (1200 x 1800 pixel) Recipe Card to sg.sodscrap@gmail.com by MIDNIGHT, Sunday, February 28, 2021.

Each month you submit a recipe you will receive a $2 gift certificate.  If you submit a recipe each month during the quarter you will receive a $5 gift certificate.  And, if you participate each month all year, at the end of the year you will receive a $15 gift certificate!

  • PLEASE REMEMBER THIS: It is easiest for me if you use your name or user name + the Recipe name (SodScrap_YummyFood) as the file name on your recipe. (I may change it to make it easier for me to track if you don't.)
  • You are welcome to submit more than one recipe. Please do!
  • Please post your recipe in the Recipe Card Gallery and post a link in this thread.
  • After I have compiled the recipes, you will receive a link to download the recipe cards from all our participants. You must send in a card to get the link!  Please remember the link is active for 7 days.

The original recipe is from my Nana (Esther Jones-Adams) who told me that during hard times she took the original recipe and instead of cooking individual hotdogs they were sliced and placed in a mini muffin. I change the flour to a gluten-free flour when I make these for family gatherings because my niece requires a gluten-free diet.

I decided to use a Super Bowl theme for this card since this recipe makes a great finger food snack.

Since most of my recipes used here in the forum come from old, family recipe boxes, I have had a hard time coming up with a keto or gluten free recipe that isn't proprietary in some way. I even emailed a blog to use one of their keto recipes that I've made several times in the past few years, but no response. Then today, Ash Wednesday, I started sifting through my mind for meat-free recipes that we use during Lent, and remembered this oldie but goodie. It is vegan and gluten-free (until you add the egg and soy sauce as a variation for leftovers). Here is Three Bean and Rice Casserole. Trust me, the leftovers are as good as the original casserole.
