This is another recipe from my Nana’s collection that was passed down to me. When I would stay with her and we would make stuffed peppers we would always use a couple of red bell peppers for me. That being said, if you have someone who prefers not to consume spicy foods, then use the peppers of your choice.

I love stuffed peppers and might give the poblanos a try. In any case, the stuffing sounds delicious! I like your card with the layered papers and especially the "family recipe" label.

This looks so good and easy enough to make and  I'm so sorry I missed this recipe card.   I really like having your Nana's recipes and it's so special that you share them with us.   Since I don't like spicy, I think I'd have to go that route and it's easy enough to substitute meatless for the meat, thanks Linda..
